The terms,
in plain words.
Ordering from Trovato’s starts a conversation, not a checkout. These are the terms that conversation runs on — including the two things Arizona requires us to tell you, and the allergens on every board.
What this site is
trovatosaz.com is the website of Trovato’s, a family charcuterie business in Scottsdale, Arizona. You can read about the boards, design one in your browser, and send us a request for one.
Using the site means these terms apply between us. If something here does not suit you, email contact@trovatosaz.com instead and we will sort it out like people.
A request is not an order
The button says Send order request, and that is exactly what it does. It is not a purchase and it does not commit either of us.
- No payment is taken on this site. There is no checkout, no card field and no payment processor anywhere in it.
- We reply, usually within a day, to confirm the board, the price and the time.
- The order exists once we have both agreed it in that reply. Until then, nothing is booked and nothing is owed.
- We may have to decline — a date we cannot make, an ingredient we cannot source, a headcount larger than one kitchen can do. We will say so quickly rather than leave you waiting.
Prices and quotes
Every number on this site is an estimate, including the running total the board builder shows you while you design. It is there so you can see the shape of the cost as you go, not to quote you.
The price is the one we confirm in writing. Cured meats are bought in for each order from suppliers whose prices move, so a quote is good for the order it was given for and for the date it was given.
Custom boards and events
Custom sizes, weddings, corporate tables, grazing tables and in-person corporate gifting are quoted individually. There is no list price for them, which is why the site does not show one — a grazing table for a full room is a different job from a board.
Send the headcount and the date through the custom boards and events form and we will size it and quote it. A quote covers that event, on that date.
Pickup and hand delivery
Collect in Scottsdale, or we bring the board to you by hand across the Phoenix area. That is the whole of it: we do not ship, and we do not use delivery apps or couriers.
That is not a preference. Arizona law requires it. A cottage food product containing dairy, meat or poultry — which is every board we make — must be sold by the preparer and delivered to the consumer in person (A.R.S. § 36-932(E)(2)). The same section requires that a board needing temperature control is transported once, for no more than two hours, held at a safe temperature. That is why the delivery area is the Valley and not the state.
- Give us at least two days. The order form will not accept an earlier date, because the cured meats are sourced for your board.
- Please be there. A chilled board cannot be left on a doorstep in Arizona and still be safe to eat, and we cannot replace one that was.
Cottage food: the disclosure Arizona requires
Required disclosure
“This product was produced in a home kitchen that may come in contact with common food allergens and pet allergens and is not subject to public health inspection.”
That sentence is set word for word by Arizona law — A.R.S. § 36-932 — and it appears on every package. Nothing is sold through this website: the form starts an order request, and the sale itself happens in person, when we hand you the board. We publish the disclosure here anyway, because you should be able to read it before you ask rather than when the food arrives.
Trovato’s is registered with the Arizona Department of Health Services as a cottage food preparer. Registration number: to be published here — ask us and we will give it to you.
To obtain additional information about cottage foods or to report a foodborne illness, go to azdhs.gov/Cottagefood.
Arizona also requires the label attached to the board itself to carry the preparer’s name and registration number, a list of every ingredient in it, and the date it was prepared. That label travels with the board, and the ingredient list on it is the authoritative one — a board is made from what the market had that week.
Allergens
What is on every board
Every board on the menu contains milk and wheat. The cheeses — caciocavallo silano, butirro and pecorino — are dairy, and the toasted rustic bread is wheat, so every board on the menu contains gluten. A board you design yourself contains what you put on it, but it is made in the same kitchen as the rest.
Boards that include the Bagnara torrone contain tree nuts — almonds. Depending on the maker, torrone can also contain egg white and honey; ask us which one is going on your board and we will tell you.
The cured meats are pork. ’Nduja, soppressata, capocollo, salsiccia and pancetta — every one of them.
It is one home kitchen, and it handles all of the above. Nothing that comes out of it can be described as free of any of them.
Tell us in the notes box on the order form, or in your reply to us, and we will tell you honestly whether we can do it. Sometimes the answer is no. It is far better to hear that from us than to find out at the table.
Changes and cancellations
Plans change. Tell us as soon as you know and we will do what we can.
- Before we have confirmed, there is nothing to cancel. A request you never hear back about costs you nothing.
- After we have confirmed, we will try to move it or adjust it. Once the meats for your board have been bought, though, they have been bought for your board.
- Cancelling a confirmed board costs 20% of the agreed price.
- Inside 48 hours of the date it is for, the full price stands. Not a penalty — by that point the meats and cheeses have been sourced specifically for your board, and they cannot go back.
Your account
An account — “Your Passport” — is optional. You can order without one.
- Keep your sign-in to yourself, and tell us if you think someone else has it.
- Two-factor authentication is available on every account, and required for anyone with staff access.
- We can suspend an account being used to abuse the site, the forms, or other people.
- Ask and we will delete it. What is held, and what deletion removes, is set out in the privacy policy.
Reviews
Reviews are moderated. Nothing appears on the site until a person has read and approved it.
- Write what happened. We will publish a poor review of a board we got wrong. We will not publish abuse, someone else’s personal details, or an advert.
- The form refuses a review containing a link before it ever reaches us. If you need to point at something, tell us in words.
- A review attached to an order on your account is marked as a verified purchase. That mark is set by the order record itself, not by you and not by us.
- What you wrote stays yours. Sending it lets us publish it on this site alongside our reply, and take it down whenever you ask.
- We do not pay for reviews, we do not write them, and there are no invented ones on this site.
What we ask of you
- Give us details that are true — a name we can use and an email address we can reach you at. A request we cannot reply to is a board nobody gets.
- Do not attack the site, scrape it, or submit through it automatically. The forms are rate-limited and we will block a machine that keeps trying.
- The photographs, the words, the mark and the board designs on this site are Trovato’s. Read them and link to them freely; please do not republish them as your own.
What this site does not promise
The 3D builder is a drawing, not a photograph. It is deliberately close — it shows the arrangement, the proportions and the ratio of cured meat and cheese by weight — but your board is built by hand from what the market had that week, and it will differ in the details.
What the site shows as available can be out of date by the time you read it. The confirmation we send you is what is true.
We keep the site up and correct as best we can. It is a small business’s website, not a utility, and we do not promise it is always available or always free of error.
Liability
We take food safety seriously, and we are registered under the Arizona Cottage Food Program. We are also a family, not a company with a claims department.
Nothing on this page attempts to remove a right you have under Arizona or federal law that cannot be removed — and nothing here limits what we owe you for our own negligence or for anything we have misrepresented. Beyond that, what we are responsible for on any one order is limited to what you paid us for that order.
The law that applies
These terms are governed by the law of the State of Arizona, and anything we genuinely cannot settle between us belongs in the state or federal courts of Arizona. Venue is Maricopa County, Arizona.
Changes to these terms
We update this page when the business changes, and the date at the top is the date it last changed. The terms that apply to your order are the ones on this page at the moment we confirmed it.
